  • 250grams chicken breast fillets, thinly sliced
  • 1tablespoons salt-reduced soy sauce
  • 1centimeters ginger, peeled, finely grated
  • 1teaspoons Woolworths pure honey
  • 1/2teaspoons cornflour
  • 2teaspoons extra virgin olive oil
  • 1/2 brown onion, thinly sliced
  • 1 bunch broccolini, roughly chopped
  • 250grams Woolworths microwave brown rice, cooked as per package instructions
  • 1 Lebanese cucumber, roughly chopped

Description

You'll love these delicious teriyaki chicken rice bowls, thanks to the nutritionally approved goodness of chicken breast, brown rice and broccolini.

Method

Step 1 of 4

Combine chicken, soy, ginger, honey and cornflour in a medium bowl. Set aside.

Step 2 of 4

Heat oil in a medium frying pan over medium-high heat. Cook onion and broccolini for 4 minutes, stirring, or until tender. Transfer to a bowl.

Step 3 of 4

Reheat same pan over medium-high heat. Add chicken and marinade, then cook for 4 minutes, stirring, or until chicken is golden and cooked through. Return vegetables to pan and toss to combine. Season with pepper.

Step 4 of 4

Spoon heated rice into bowls and top with chicken, vegetables and cucumber.
