- 1 medium sweet potato, unpeeled, cut into 2cm pieces
- 5milliliter olive oil cooking spray
- 60grams baby rocket leaves
- 1/4 cup Macro Organic almonds, roughly chopped

- 1/2 cup day-old breadcrumbs

Meatballs a favourite in your household? Transform free range chicken mince into delicious morsels that you can serve with a salad and sauce.
Method
Step 1 of 5
Preheat oven to 240°C/220°C fan-forced. Line 2 large baking trays with baking paper.
Step 2 of 5
Place sweet potato on 1 tray. Lightly spray with oil. Bake for 30 minutes or until golden and tender. Set aside for 10 minutes to cool slightly. Add rocket and almonds, then toss to combine.

Meanwhile, combine mince, egg, breadcrumbs and half of the onion in a large bowl. Roll tablespoonfuls of mixture into balls and place on remaining tray. Lightly spray meatballs all over with oil. Bake for 18 minutes, turning halfway, or until golden brown and cooked through.

Lightly spray a small saucepan with oil and place over medium heat. Cook capsicum and remaining onion for 6 minutes, stirring, or until softened. Add tomato and 1/4 cup water, then bring to the simmer. Reduce heat to low and simmer, uncovered, for 7 minutes or until mixture has thickened slightly. Season with pepper.

Serve meatballs with tomato sauce and sweet potato salad.
