Spiced Caramelized Pineapple With Rum

- 50grams butter
- 4tablespoons caster sugar
- 625grams pineapple flesh, cut into bite-sized pieces
- 2-3tablespoons star anise
- 1 cinnamon stick
- 2-3tablespoons dark rum
- 1 dollop cream or ice cream, to serve
Method
Step 1 of 3
Heat the butter in a large frying pan until it begins to foam.
Step 2 of 3
Add the sugar, pineapple, star anise and cinnamon stick and cook for 5-6 minutes over a high heat, stirring continuously, until the sugar mixture starts to caramelize.
Step 3 of 3
Pour in the rum and stir to mix well. Cook for a further 1-2 minutes, then remove from the heat and serve immediately with a dollop of cream or ice cream.
