- 600grams cauliflower florets, chopped

- 1 large red onion, peeled and finely sliced

Description
This gluten free cauliflower pizza is a great way to add extra veggies to pizza night.
Instruction tip
You can buy ready made cauliflower rice to speed up the prep time for this recipe.
Method
Step 1 of 5
Pre-heat the oven to 180°C/160°C fan-forced. Blitz the cauliflower into rice in a food processor. Place in a bowl and microwave for 2-3 minutes. Wearing rubber gloves, tip onto a clean tea towel, wrap tightly and squeeze out excess moisture over the sink.

Place the cauliflower in a large bowl, tip in the ground almonds and beaten eggs and mix well to form a dough. Divide the dough between two baking trays lined with parchment and spread each out into a tightly packed, medium round disc with the back of a spoon.

Bake for 20 minutes until lightly golden.

Heat half the oil in a large pan on medium high heat and cook the onions for 8 minutes, add the balsamic vinegar and cook for 2 minutes until absorbed. Stir in the kale and cook for 3 minutes until wilted.
Step 5 of 5
Dot the baked pizza crusts with goats cheese and torn mozzarella, top with the red onion and kale mix and bake for 10-15 minutes until the cheese is melted and golden.
