- 1tablespoons harissa Middle Eastern spice blend
- 1/2 cup traditional rolled oats
- 2 cloves garlic, crushed
- 1/2 bunch coriander, roots washed
- 1 large avocado
- 1/4 cup vegan mayonnaise
- 4 vegan brioche buns, split, toasted
- 1/4 head iceberg lettuce, torn
- 1/2 jar whole roasted peppers, drained, thickly sliced
- 1 red onion, thinly sliced into rounds

Description
No one needs to know that this filling plant-based burger is packed with black beans and rolled oats. Just serve up a patty between brioche buns, slathered in vegan mayo, and there you have it!
Method
Step 1 of 3
Drain beans well and pat dry with paper towel. Transfer to a food processor. Reserve 1/4 tsp spice mix. Roughly chop coriander stems and roots, reserving leaves. Add remaining spice mix, oats, garlic and coriander stems and roots to food processor. Process until mixture is almost smooth. Add half of the avocado. Pulse until just combined.

Using clean damp hands, shape mixture into 4 patties. Place on a plate and chill for 30 minutes.
Step 3 of 3
Heat a greased barbecue plate on medium heat. Cook patties for 2-3 minutes each side or until golden. Combine mayonnaise with reserved spice mix. Spread bun bases with half of the mayonnaise mixture. Slice remaining avocado. Top bases with lettuce, avocado, patties, roasted peppers, onion and coriander leaves. Drizzle with remaining mayonnaise and sandwich with bun tops. Serve.
