  • 1/2 cup aquafaba
  • 2tablespoons white vinegar
  • 1/2tablespoons sugar
  • 1/2 cup vegetable oil
  • 2teaspoons water
  • 20grams basil, chopped
  • 4 cloves garlic, peeled, minced
  • 4tablespoons vegan parmesan
  • 1teaspoons lemon juice

Description

Easy, homemade fresh and herby vegan aioli is so simple to make, delicious as a dip or spread.

Method

Step 1 of 3

Add the aquafaba, vinegar and sugar to a deep bowl, using a hand blender, blend the ingredients together on high speed until frothy.

Step 2 of 3

Slowly drizzle in the vegetable oil into the bowl while blending on high to emulsify the oil with the aquafaba mixture. Add a teaspoon or 2 of water if the mayonnaise becomes too thick while blending.

Step 3 of 3

Add in the chopped basil, garlic, vegan parmesan cheese and lemon juice, blending until smooth. Season with salt before adding to a container with a lid. Store in the fridge until ready to use.
