Stick it to me! These tender eggplant skewers take just 20 minutes to cook, making them a wonderful grilling option at your next summer barbecue.
Method
Step 1 of 3
Cut eggplant into eight 3cm-wide strips. Combine paprika, oregano, garlic and 1/4 cup oil in a large bowl. Season well with pepper. Add eggplant and turn until well coated. Thread eggplant onto 8 metal skewers.
Step 2 of 3
Heat barbecue grill on medium heat. Cook eggplant, turning occasionally, for 20 minutes or until lightly charred and tender.
Step 3 of 3
Spread hummus on a serving plate. Top with skewers and sprinkle with parsley. Drizzle with remaining oil and season with pepper. Serve with lemon.
