Description

This honey and soy chicken stir fry recipe uses just five ingredients and fuses soft hokkien noodles with tender meat, crunchy veggies and dry roasted cashews tossed in a honey soy marinade.

Method

Step 1 of 4

Place noodles in a large heatproof bowl and cover with boiling water. Stand for 3 minutes or until tender. Drain.

Step 2 of 4

Meanwhile, using a fork, remove chicken from skewers. Heat a wok over medium-high heat. Add 1 tbs vegetable oil, swirling to coat. Stir-fry chicken for 5 minutes or until just cooked through. Transfer to a bowl and cover to keep warm.

Step 3 of 4

Add 2 tsp vegetable oil to wok. Stir-fry vegetables for 4 minutes or until just tender. Add noodles, tossing to combine.

Step 4 of 4

Divide stir-fry among bowls, scatter over cashews and serve.
