  • 200grams Macro Organic wholemeal spaghetti
  • 2 cups frozen corn kernels
  • 2 cups frozen cauliflower florets
  • 2 free range eggs
  • 1 cup finely grated light tasty cheese
  • 1/4 bunch continental parsley, leaves picked
  • 185grams tuna in springwater, drained, coarsely flaked

Description

Delight little tummies with this speedy, last-minute dinner time favourite that combines sweet corn kernels with tuna and cauliflower for a creamy kid-friendly meal.

Method

Step 1 of 4

Cook pasta in a saucepan of boiling water according to packet directions, adding corn and cauliflower in the last 2 minutes.

Step 2 of 4

Meanwhile, whisk eggs and three-quarters of the cheese in a large heatproof bowl to combine. Finely chop half of the parsley and add to egg mixture.

Step 3 of 4

Drain pasta and vegetables and return to pan. Place over low heat. Add egg mixture and toss over low heat for 1 minute until pasta mixture is well coated. Remove from heat.

Step 4 of 4

Add tuna. Toss to combine. Divide among serving bowls. Sprinkle with remaining cheese and remaining parsley leaves. Serve.
