Ham Rice & Vegetable Pie Maker Patties

- 1 1/2 cup cooked rice
- 150grams ham, diced
- 1 carrot, grated
- 3/4 cup frozen peas, thawed
- 3/4 cup frozen corn, thawed
- 3 spring onions, sliced thinly
- 1 clove garlic, minced
- 1 cup tasty cheese, grated
- 1 cup mozzarella cheese, grated
- 4-5 eggs
- 2/3 cup self raising flour
- 1 pinch salt & pepper
Description
Great for the school lunch box, or easy lunch served with salad or chips.
Method
Step 1 of 4
In a large bowl, add grated carrot, peas, corn, spring onion, garlic, ham, both cheeses and rice, and mix thoroughly to break the rice up.
Step 2 of 4
In a jug lightly whisk your eggs and add salt and pepper.
Then add this to the bowl and mix.
Add the flour lastly and mix till everything is well combined.
Step 3 of 4
Turn the pie maker on, and add about 1/4 cup of the mixture. Close lid and cook for 8-10 minutes or until the tops are brown.
I used my Kmart pie maker to make this lot.
Step 4 of 4
These can be cooked in a muffin pan in the oven if you don't have a pie maker. Preheat oven to 190 degrees and cook for 25-30 minutes ( depending on your oven) or until tops are nice and brown.
