- 400grams gold sweet potato, peeled
- 5mL extra virgin olive oil cooking spray
- 2 Woolworths wholemeal bread rolls
- 185grams tuna in springwater, drained
- 100grams Sweet Solanato® tomatoes, halved lengthways
- 1/2 cup Woolworths frozen corn kernels
- 1/2 cup shredded tasty cheese
- 1 spring onion, trimmed, thinly sliced
- 8 eggs
- 1 1/2 cups milk
Description
Packed with flavour and satisfying crunch, these easy, kid-friendly cheesy tuna and corn strata cakes make a perfect weeknight meal or brunch dish.
Method
Step 1 of 3
Preheat oven to 180°C/160°C fan-forced. Cut potato into 1cm-thick chips. Place on a large baking tray. Spray with oil. Toss to coat. Tear rolls into coarse 3cm pieces.
Step 2 of 3
Divide bread, tuna, tomato, corn, half of the cheese and half of the onion among 4 x 2-cup capacity ovenproof dishes on a large baking tray.
Step 3 of 3
Whisk eggs and milk in a jug until well combined. Season with freshly cracked black pepper. Pour evenly among dishes. Sprinkle with remaining cheese. Place stratas and potato in oven, with potato tray on the top rack. Bake for 25 minutes or until stratas are puffed and lightly golden and potato is tender and lightly golden. Sprinkle with remaining onion. Serve stratas with potato.
