  • 300grams Macro Organic wholemeal spirals
  • 2 cups Woolworths prep set go frozen stir-fry mixed vegetables, water chestnuts reserved (see tip)

  • 320grams Mix-a-Mato® tomatoes, halved
  • 1/4 bunch basil, leaves picked, chopped
  • 1 cup finely grated light tasty cheese
  • 1 cup smooth ricotta

Description

Inspired by a creamy vegetable pizza, this kid-friendly pasta dish is a great one to have on hand when you don't really feel like cooking. Topped with creamy ricotta, it's a real treat.

Method

Step 1 of 3

Cook pasta in a large saucepan of boiling water according to packet instructions, adding frozen vegetables in the last 2 minutes of cooking. Drain and return to saucepan.

Step 2 of 3

Omit salt sachet from tomatoes. Add tomatoes and half of the oil sachet, half of the basil and half of the cheese. Toss to combine.

Step 3 of 3

Divide pasta mixture among serving bowls. Top each with a dollop of ricotta. Sprinkle with remaining basil and remaining cheese and drizzle with remaining oil. Serve.
