  • 1tablespoons extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 1 small carrot, grated
  • 1 small red capsicum, halved, deseeded, finely chopped
  • 3 tomatoes
  • 1/2 bunch basil, leaves picked
  • 5milliliter olive oil cooking spray
  • 2 Woolworths soft white wraps
  • 2/3 Woolworths Italian cheese blend

Description

Delicious pizza flavours layered into a quesadilla-inspired pizzadilla. This nutritionally approved recipe is fun for the whole family.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced.

Step 2 of 3

Heat extra virgin olive oil in a medium saucepan over medium heat. Cook onion, carrot and capsicum for 10 minutes, stirring, or until softened. Finely dice 2 1/2 tomatoes, then add to pan. Cook for 15 minutes, stirring, or until tomato has broken down and reduced. Remove pan from heat. Roughly chop half of the basil leaves, then add to pan and season with pepper. Stir to combine.

Lightly spray a 24cm non-stick ovenproof frying pan with oil. Place over medium heat. Place 1 wrap in pan, then top with half each of the tomato mixture and cheese. Top with remaining wrap. Cook for 2 minutes or until golden on underside. Cover pan with a large plate and invert pan to transfer pizzadilla onto plate, then slide back into pan, cooked-side up. Top with remaining tomato mixture and cheese. Thickly slice remaining tomato and arrange on top. Bake for 8 minutes or until cheese has melted and is light golden. Stand for 5 minutes. Top with remaining basil leaves, then cut into wedges to serve.
