  • 1 carrot, grated
  • 1 zucchini, grated
  • 400grams no-added-salt diced tomatoes
  • 1/4 cup continental parsley leaves, finely chopped (to serve)

Description

Try this recipe for golden baked potatoes served with a veggie-packed tomato sauce. It's nutritionally approved and is the perfect kid-friendly snack.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Cook potatoes in microwave according to packet instructions.

Step 2 of 3

Transfer potatoes to tray. Lightly crush with a fork. Spray with oil. Season with pepper. Bake for 25 minutes or until golden.

Step 3 of 3

Meanwhile, add tomato paste, carrot, zucchini and tomatoes to a small saucepan over medium heat. Cook, stirring, for 3 minutes or until vegetables have softened. Season with pepper. Transfer to a small blender or food processor, then blitz for 10 seconds or until smooth. Serve with smashed potatoes sprinkled with parsley.
