  • 175grams sweet baby vine capsicums
  • 1/3 cup light smooth ricotta
  • 95grams tuna in springwater, drained
  • 1/4 punnet chives, finely chopped
  • 12 small sprigs dill

Description

These simple, creamy capsicum carrots are flavourful and filling. Whip up a batch for your Easter road trip to keep the kids satisfied.

Method

Step 1 of 3

Cut each capsicum in half lengthways. Remove and discard seeds and membrane.

Step 2 of 3

Combine ricotta, tuna and chives in a small bowl. Season with freshly cracked black pepper.

Step 3 of 3

Divide mixture among capsicum halves. Press 1 dill sprig into the top of each capsicum. Serve.
