- 45grams soba noodles
- 2teaspoons sesame seeds, toasted
- 185grams tuna in springwater, drained, flaked
- 150grams rainbow slaw
- 1/4 bunch coriander, sprigs picked
- 6 sheets rice paper
- 1 clove garlic, crushed
- 1/4 cup pepitas
- 8 Woolworths snackable carrots, sliced
- 2 Qukes® baby cucumbers, sliced
- 2 pouches Woolworths vanilla yoghurt
- 60grams light cheddar, cut into sticks
- 250grams blueberries
Description
This lunchbox will be the talk of the town, with soft rice-paper rolls paired with veggies, cheese and fresh fruit.
Method
Step 1 of 3
Cook noodles in a large saucepan of boiling water for 5 minutes or until tender. Drain, then refresh under cold water. Drain well. Using kitchen scissors, snip noodles into shorter lengths. Add sesame seeds and toss to combine.
Step 2 of 3
Add tuna, slaw and coriander to noodles, then mix well. For each rice paper roll, dip 1 sheet briefly into a bowl of water to soften. Place wrapper on a chopping board. Top with 2 tbs tuna mixture. Fold in sides, then roll up to form a log. Repeat with remaining sheets and tuna mixture to make 6 rolls in total. Cut in half.
Step 3 of 3
Serve rolls in a lunch box with pepitas, carrot, cucumber, yoghurt, cheddar and blueberries.
