- 2 slices multigrain bread
- 200grams lean beef mince
- 1 carrot, grated, excess liquid squeezed and discarded
- 1teaspoons smoked paprika
- 1 clove garlic, crushed
- 1 free range egg
- 1/2 cup Woolworths shredded light tasty cheese
- 1 mini flour tortilla, toasted, cut into wedges
- 2 Woolworths Fresh Food Kids mini bananas
- 6 Qukes® baby cucumbers, sliced
- 2 pouches Woolworths blueberry yoghurt 70g
- 125grams blueberries
Description
Add some spice, colour and flair to your little one's lunch box with these paprika-studded beef meatballs and a selection of easy-to-enjoy snacks.
Method
Step 1 of 3
Process bread to form fine crumbs. Transfer breadcrumbs to a large bowl. Add beef, carrot, paprika, garlic and egg to bowl and mix well. Shape into 6 meatballs.
Step 2 of 3
Heat a large non-stick frying pan over medium-high heat. Add meatballs to pan and cook, turning occasionally, for 5-8 minutes or until cooked through and browned. Cool. Wipe pan clean. Add tortilla to pan and cook for 1 minute each side or until toasted. Cut into wedges.
Step 3 of 3
Place 3 meatballs in each lunch box, then add half of the cheese, half of the tortilla, 1 banana, 3 cucumbers, 1 yoghurt pouch and half of the blueberries to each lunch box. Serve.
