  • 1 small carrot, finely grated
  • 1 zucchini, finely grated
  • 500grams Woolworths chicken mince
  • 1 clove garlic, crushed
  • 2tablespoons finely chopped continental parsley
  • 12 sheets filo pastry
  • extra virgin olive oil cooking spray
  • 2teaspoons poppy seeds
  • 1 small brown onion, finely chopped
  • 400grams Macro no-added-salt diced tomatoes

Description

Chicken mince shares a stage with a medley of vegetables wrapped in pastry parcels crying out to be dipped in a freshly made tomato and onion sauce. Rally the tiny troops!

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Process bread to make fine crumbs. Using hands, squeeze excess liquid from carrot and zucchini. Combine breadcrumbs, carrot, zucchini, chicken, garlic and parsley in a large bowl.

To make 4 rolls at a time, stack 3 filo sheets on a clean work surface, spraying oil between sheets. Fold in half. Spoon one-quarter of chicken mixture evenly along the longest edge closest. Roll up to form a log. Trim ends. Cut into 4 equal portions. Place on prepared tray. Repeat to make 16 rolls in total. Spray tops with oil. Sprinkle with poppy seeds. Bake for 25 minutes or until cooked and golden-brown.

Meanwhile, spray onion with oil. Heat a small non-stick frying pan over medium-high heat. Add onion and cook, stirring, for 2 minutes or until softened. Add tomato and bring to the boil. Reduce heat, simmer for 2 minutes. Remove from heat. Cool slightly. Process until almost smooth.

Serve with tomato sauce.
