- 5milliliter extra virgin olive oil cooking spray
- 1 small brown onion, chopped
- 250grams sweet potato, peeled, cut into 1.5cm pieces
- 2 cloves garlic , crushed
- 2tablespoons plain flour
- 2 cups milk
- 1tablespoons Dijon mustard
- 1/2 cup shredded light tasty cheese
- 850grams no-added-salt cannelli beans, drained, rinsed
- 4 cups frozen country greens mixed vegetables
- 4 sheets filo pastry
Description
Serve up nutritionally approved veggie pot pies loaded with deliciousness to satisfy hungry little tummies. Ready in two steps, this easy recipe ticks all the boxes.
Method
Step 1 of 2
Spray a large, deep frying pan with oil. Heat over medium-high heat. Add onion and potato and cook for 10 minutes or until potato begins to soften. Add garlic. Cook, stirring, for 1 minute or until fragrant. Add flour and stir to coat.
Step 2 of 2
Gradually add milk, stirring to combine. Add mustard and cheese. Stir until smooth. Bring to the boil. Add beans and vegetables. Return to the boil. Remove from heat. Spoon mixture among 4 x 2-cup capacity ovenproof bowls or ramekins. Scrunch each filo sheet and place on the top of each ramekin. Spray with oil. Bake for 20 minutes or until golden and filling is bubbling. Serve.
