  • 1 free range egg, lightly beaten
  • 5milliliter extra virgin olive oil cooking spray
  • 250grams strawberries, hulled, sliced into rounds
  • 1/2 cup light ricotta
  • 1 1/2tablespoons honey
  • 125grams blueberries, to serve

Description

Shake up breakfast time with healthier strawberry pancake 'cereal' to satisfy hungry little tummies. The bite-sized pieces with light ricotta and honey will go down a treat!

Method

Step 1 of 3

Combine flour and baking powder in a large bowl. Make a well in the centre. Add milk and egg, then stir gently until just combined. Stand for 10 minutes to rest.

Step 2 of 3

Lightly spray a large non-stick frying pan with oil and place over medium heat. Working in batches, coat strawberry slices in batter, then place in pan. Cook for 2 minutes or until bubbles appear on surface. Flip and cook for a further 1 minute. Transfer to a plate and cover to keep warm. Repeat with remaining strawberry slices and batter.

Step 3 of 3

Divide pancakes among 6 bowls. Dollop with ricotta and drizzle with honey. Top with blueberries. Serve.
