Description
Chill out: summertime entertaining is a breeze with these four-ingredient iceblocks that pair creamy coconut yoghurt with zesty plums for a cool and sweet treat.
Method
Step 1 of 2
Chop plums and process in a small food processor until finely chopped. Add coconut water and process until smooth. Spoon half of the mixture into 6 x 1/3 cup-capacity iceblock moulds until they are full. Freeze for 1 hour.
Step 2 of 2
Remove moulds from freezer and spoon coconut yoghurt evenly into each mould. Freeze for a further 1 hour until just set. Insert sticks into yoghurt layer, then add remaining plum mixture. Freeze iceblocks for 3 hours or overnight until firm. To serve, remove iceblocks from moulds.
