- 2 mixed-grain wraps
- 1/3 cup Greek-style natural yoghurt
- 1/2 cup baby spinach leaves
- 1 carrot, shredded into long, thin strips
- 1/2 yellow capsicum, cut into long, thin strips
- 1 Woolworths plump & juicy whole beetroot, cut into 1cm strips
Description
With a colourful, crunchy salad filling, these nutritionally approved rainbow wraps will delight little tummies and only take 10 minutes to make.
Method
Step 1 of 2
Place 1 wrap on a board. Leaving a 1.5cm border around the edge of wrap, spread with 2 tbs yoghurt. Arrange half each of the spinach, carrot, capsicum and beetroot side by side on wrap to cover yoghurt.
Step 2 of 2
Roll, tucking in sides, to enclose filling. Repeat with remaining wrap, yoghurt, spinach, carrot, capsicum and beetroot. Cut wraps in half crossways and serve.
