Description
This creative recipe makes a great healthier snack for kids. It's packed with colour, easy to hold and delicious – tick, tick, tick.
Method
Step 1 of 2
Fill a large bowl with lukewarm water. Soak 1 rice paper round in water for 10 seconds, then remove and place on a board. At one edge, top with one-eighth of the cucumber, 2 tbs rice, one-eighth of the carrot and one-eighth of the cabbage. Roll, tucking in sides, to enclose filling. Repeat with remaining rice paper, cucumber, rice, carrot and cabbage to make 8 rice paper rolls.
Step 2 of 2
Combine soy sauce and 2 tbs water in a small bowl. Serve rolls with soy-sauce mixture.
