  • 8 sheets rice paper, thawed if frozen
  • 1 medium carrot, peeled and sliced thinly lenghtways into sticks
  • 1 head beetroot, sliced into thin sticks
  • 80grams feta, crumbled

Method

Step 1 of 3

Blanch and refresh the asparagus 30 seconds in boiling water then slice.

Step 2 of 3

Dip the rice paper into warm water for 5 seconds.

Step 3 of 3

Place the mixed veg sticks into the centre of a sheet of pastry, add some feta, fold over the edges and roll tightly.
