  • 1/2 cup aquafaba
  • 2tablespoons white vinegar
  • 1/2tablespoons sugar
  • 1/2 cup vegetable oil
  • 2teaspoons water
  • 4tablespoons sriracha sauce

Description

Thick, creamy and tasty vegan mayonnaise with a touch of heat that's quick and easy to make - no one will believe it is made with aquafaba.

Method

Step 1 of 3

Add the aquafaba, vinegar and sugar to a deep bowl, using a hand blender, blend the ingredients together on high speed until frothy.

Step 2 of 3

Slowly drizzle in the vegetable oil into the bowl while blending on high to emulsify the oil with the aquafaba mixture. Add a teaspoon or 2 of water if the mayonnaise becomes too thick while blending.

Step 3 of 3

Mix in the sriracha seasoning with salt before adding to a container with a lid. Store in the fridge until ready to use.
