- 280grams hummus, ready-made
- 1/4 red onion, peeled, diced small
- 2 roma tomatoes, seeds and core removed, diced small
- 1/2 cucumber, diced small
- 1 red capsicum, seeds and veins removed, diced small
- 12 pitted kalamata olives, chopped
- 1 lemon, juiced
- 2tablespoons olive oil
- 1 pinch salt
- 1 pinch pepper
- 50grams feta cheese, crumbled
- 4tablespoons pinenuts, toasted
Description
Layered with delicious toppings, this hummus makes a bright and cooling snack or appetizer meant to be shared and enjoyed.
Method
Step 1 of 2
Spread the hummus out onto a platter or plate. Toss the onions, tomatoes, cucumbers, red capsicum and olives together with the lemon juice, olive oil seasoning with salt and pepper.
Step 2 of 2
Add the salad to the top of the hummus, scatter the feta cheese and pine nuts before serving with bread, crackers or pita chips.
