For the lemon dressing
- 2tablespoons lemon juice
- 1 garlic, crushed
- 2tablespoons olive oil
- 1 pinch salt
- 1 pinch pepper
- 800grams cans chickpeas, drained and rinsed
- 2 plum tomatoes, roughly chopped
- 4 spring onions, thinly sliced
- 1 red chilli, deseeded and thinly sliced
- 4tablespoons coriander leaves, roughly chopped
- 4 pitta bread, grilled , cut into thin fingers (to serve)

Method
Step 1 of 3
Combine all the salad ingredients in a shallow bowl.
Step 2 of 3
Put all the dressing ingredients in a screw-top jar, season to taste with salt and pepper, and shake well. Pour over the salad and toss well to coat all the ingredients.
Step 3 of 3
Cover the salad and leave to stand at room temperature for about 10 minutes to allow the flavours to mingle. Serve with grilled pita bread fingers.
