For the lemon dressing
  • 2tablespoons lemon juice
  • 1 garlic, crushed
  • 2tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 800grams cans chickpeas, drained and rinsed
  • 2 plum tomatoes, roughly chopped
  • 4 spring onions, thinly sliced
  • 1 red chilli, deseeded and thinly sliced
  • 4tablespoons coriander leaves, roughly chopped
  • 4 pitta bread, grilled , cut into thin fingers (to serve)

Method

Step 1 of 3

Combine all the salad ingredients in a shallow bowl.

Step 2 of 3

Put all the dressing ingredients in a screw-top jar, season to taste with salt and pepper, and shake well. Pour over the salad and toss well to coat all the ingredients.

Step 3 of 3

Cover the salad and leave to stand at room temperature for about 10 minutes to allow the flavours to mingle. Serve with grilled pita bread fingers.
