Description
Impress the kids with a nutritious, flavour-packed tuna, avocado, tomato and basil pesto sandwich for lunch.
Instruction tip
Leftover tip:Store remaining tuna mixture in the fridge for a few days to use for a quick lunch.
Method
Step 1 of 2
Add tuna, mayonnaise, mustard and dill to a small food processor. Season with pepper. Process until dill is finely chopped and all ingredients are well combined. Transfer tuna mixture to fridge to chill for 10 minutes.
Step 2 of 2
Toast sandwich thins. Spread basil pesto on sandwich bases. Top with avocado and ⅓ tuna mixture. Top with tomato. Sandwich with remaining sandwich thin. Slice each sandwich in half. Serve.
