Pizza dough
  • 1 cup Woolworths light Greek-style natural yoghurt
    ingredient tip
  • 1 1/2 cups wholemeal flour
  • 2teaspoons baking powder
  • extra virgin olive oil cooking spray
  • 1 spring onion, quartered lengthways
  • 1 horizontal slice red capsicum
  • 1 1 horizontal slice yellow capsicum
  • 6-8 asparagus spears
  • 2-3 cauliflower florets, sliced
  • 1 yellow cherry tomato, halved
  • 1 red cherry tomato, halved

Description

Kids will love decorating this focaccia with flowers before baking it and enjoying the efforts of their labour. Enjoy as it is or with a tasty dip.

Garlic lovers, rejoice: spread a little crushed garlic over the base before adding the vegetables for bonus flavour.

Method

Step 1 of 4

To make pizza dough, place yoghurt, flour and baking powder in a medium bowl. Using a flat-bladed knife, stir mixture until a sticky dough forms. Turn dough out onto a lightly floured surface. Knead gently until just smooth. Wrap in baking paper and set aside for 20 minutes to rest.

Step 2 of 4

Preheat oven to 200°C/180°C fan-forced. Spray a 16x26cm slice pan with oil.

Step 3 of 4

Using lightly floured fingertips, press dough evenly over base of greased pan. Arrange onion and capsicum to make flowers with stems. Place 1 tomato half in the centre of each capsicum to make flowers. Place asparagus, trimming where desired, around flower stems. Arrange cauliflower and remaining tomatoes over dough. Spray with oil.

Step 4 of 4

Bake dough for 20 minutes or until golden-brown. Set aside for 5 minutes to cool before running a flat-bladed knife around the edge to loosen. Use an egg lifter or large palette knife to lift focaccia from pan. Season with freshly ground black pepper. Cut into slices. Serve.
