  • 5milliliter extra virgin olive oil cooking spray
  • 420grams no-added-salt black beans, rinsed, drained
  • 210grams no-added-salt diced tomatoes
  • 2 spring onions, thinly sliced
  • 4 wholemeal pita pockets, halved, lightly toasted
  • 1 Lebanese cucumber, cut into ribbons
  • 4 iceberg lettuce leaves, shredded
  • 1/2 cup Macro Organic original corn chips, coarsely broken
  • 1/2 cup shredded light tasty cheese

Description

Filled with cucumber, lettuce, corn chips and a juicy beef mince mixture, these crunchy, flavourful pita pockets will satisfy hungry little tummies.

Method

Step 1 of 3

Spray beef with oil. Heat a large non-stick frying pan over medium-high heat. Add beef and cook, stirring to break up any lumps, for 5 minutes or until browned.

Step 2 of 3

Add beans and tomato to beef and cook, stirring, for 4-5 minutes or until mixture thickens and most of the liquid evaporates. Remove from heat. Stir in onion.

Step 3 of 3

Fill each pita with one-quarter each of the cucumber, lettuce, chips, cheese and mince mixture. Serve.
