  • 400grams Woolworths frozen chicken breast sweet chilli tenders
  • 3 peaches, destoned, roughly chopped
  • 1 clove garlic
  • 2tablespoons apple cider vinegar
  • 1tablespoons soy sauce
  • 1tablespoons Dijon mustard
  • 1tablespoons cornflour
  • 1/4 bunch continental parsley, leaves picked

Description

Pair sweet chilli chicken breast tenders with a delicious sweet and sour peach for a crowd-pleasing appetiser or an easy afternoon snack.

The peach sauce can be made a day ahead. Store covered in the fridge. Bring to room temperature before serving.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Place chicken on prepared tray and cook for 20 minutes or until cooked and golden-brown.

Step 2 of 3

Meanwhile, add peach and garlic to a small food processor and blitz until smooth. Blend cornflour and cup water in a small bowl until smooth. Add peach mixture to a small pan with vinegar, soy, mustard and cornflour mixture and stir to combine. Cook on medium heat, stirring frequently, for 8 minutes or until thickened and slightly darker in colour. Allow to cool.

Step 3 of 3

Place chicken and sauce on a platter. Serve sprinkled with parsley.
