- 1 clove garlic, sliced
- 400grams Italian diced tomatoes
- 400grams beef sizzle schnitzel
- 1/4 cup flaked almonds
- 120grams baby spinach leaves
- 60grams Woolworths Danish feta, crumbled
- 1/4 bunch continental parsley, leaves chopped
- 120grams green beans, halved, steamed, to serve
- 4 slices white sourdough, toasted to serve
- 2tablespoons extra virgin olive oil
Description
Australian beef minute steaks make this Italian-inspired recipe quick (ready in 30 minutes!) and tasty, with almonds, feta, spinach and tomatoes bringing the dish to life.

Prepping tip:Tomato sauce can be made up to 2 days ahead. Cool sauce, then store in an airtight container in the fridge.
Method
Step 1 of 4
Heat 1 tbs oil in a large deep frying pan over medium-high heat. Add garlic and cook for 1 minute or until fragrant. Stir in tomatoes and 1/2 cup water and bring to a simmer. Simmer, stirring occasionally, for 10 minutes or until thickened slightly.

Meanwhile, place beef on a chopping board and cover with a piece of baking paper. Using a meat mallet or the base of a frying pan, gently pound beef until 3mm thick. Using half of the spinach, almonds and feta, divide ingredients equally and place in centre of each steak. Roll beef up tightly and secure with a toothpick.

Heat remaining oil in a medium frying pan over medium-high heat. Add beef and cook, turning, for 1-2 minutes or until browned all over.

Transfer beef to pan with tomatoes and simmer, turning occasionally, for 3-5 minutes or until cooked. Cut beef in half. Sprinkle beef with parsley. Serve with beans, bread and remaining spinach.
