  • 2 Woolworths wholegrain wraps
  • 5milliliter extra virgin olive oil cooking spray
  • 1teaspoons smoked paprika
  • 250grams cooked chicken breast, shredded
  • 200grams Sweet Solanato® tomatoes, quartered
  • 60grams baby spinach leaves
  • 60grams green beans, cut in half, blanched
  • 210grams no-added-salt brown lentils, rinsed, drained
  • 1/3 cup continental parsley leaves
  • 2 spring onions, sliced
  • 1/2 Woolworths grated light tasty cheese
  • 2 Woolworths mini apples
  • 2 pouches Woolworths vanilla yoghurt
  • 1/2 lemon, cut into wedges

Description

With a combination of shredded chicken, tomatoes, spinach, beans and parsley, this fattoush is deliciously easy to make. Enjoy it alongside some cold yogurt and fresh fruit.

Method

Step 1 of 3

preheat oven to 200°C/180°C fan-forced. Grease and line a large baking tray with baking paper. Place bread on tray. Spray with oil. Sprinkle with paprika. Bake for 5 minutes or until lightly toasted. Cool. Break into pieces.

Step 2 of 3

Combine chicken, tomato, spinach, beans, lentils, parsley, onion and cheese in a large bowl. Add bread and toss to combine.

Step 3 of 3

Serve salad in lunch boxes with apple, yoghurt and a lemon wedge.
