- 6 slices wholemeal bread, crusts removed
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 185grams tuna, drained
- 5tablespoons mayonnaise (save 1 tbsp for later)
- 2 spring onions, finely chopped
- 1/2 large red capsicum, finely sliced
- 1/2 cucumbers, deseeded and finely sliced

Description
Turn party sandwiches into something special with these easy-to-make sushi versions.
Method
Step 1 of 3
Roll each slice of bread out as thinly as you can with a rolling pin. Mash together the tuna, 4 tbs of mayonnaise, and spring onions, and season well. Make sure the resulting paste is smooth.
Step 2 of 3
Lay a slice of bread out, widthways. Spread a little extra mayonnaise in a 1cm line at one long edge of the piece of bread farthest from you (to help the sandwich stick together). Spread a thin layer of tuna over the bread, stopping where the line of mayonnaise starts. Lay a line of red capsicum at the long edge of the bread nearest to you, and top it with a thin line of cucumber.
Step 3 of 3
Pick up the edge nearest you, fold it over the vegetables, then roll until it sticks itself together with the mayonnaise. Trim the edges and cut into 4 pieces, using a sawing action so the shape does not get spoiled. Serve upright.
