- 1/2 cup sushi rice
- 1 1/2tablespoons mirin
- 12 nori sheets
- 1 gem lettuce, trimmed, leaves separated, large leaves halved lengthways
- 25grams snow pea shoots,, trimmed
- 1/2 small avocado, deseeded, thickly sliced
- 150grams Woolworths natural hot-smoked salmon, flaked
- 4 radishes, cut into matchsticks
- 1/3 cup Japanese mayonnaise
- 1tablespoons wasabi paste
- 1/4 cup salt-reduced soy sauce
Description
Make these eye-catching salmon and sushi handrolls for a delicious starter or a fun addition to a family barbecue.
Instruction tip
Variation:Instead of salmon, try sliced marinated tofu, sliced chicken schnitzel or cooked prawns. You can also use other veggies such as sliced capsicum, cucumber, carrot or shredded cabbage.
Method
Step 1 of 3
Rinse and drain rice 3 times or until water runs clear. Drain well. Place rice and 3/4 cup cold water in a small saucepan over medium heat. Cover. Bring to the boil. Reduce heat to low. Simmer, covered, for 12 minutes or until water has been absorbed. Remove pan from heat. Stand, covered, for 10 minutes.

Transfer rice to a ceramic dish. Using a spatula, stir rice to break up lumps. Gradually add mirin, lifting and turning rice, until rice has cooled.

From the shortest side, cut each nori sheet in half. Place 1 piece of nori, shiny-side down, on a clean surface. At one short end, place 1 gem lettuce at a 45-degree angle. Top lettuce with about 2 tsp rice and spread out slightly. Arrange a small amount of pea shoots, avocado, salmon and radish on top. Dollop with a little mayonnaise. Fold short side of nori that’s closest to the filling over the filling to create a triangle, then roll to enclose filling and create a cone shape. Use a little water to secure nori cone. Repeat with remaining nori, lettuce, rice, pea shoots, avocado, salmon, radish and mayonnaise. Serve with wasabi and soy.
