- 1 1/2teaspoons wasabi (to serve)
- 1 avocado, mashed
- 1 Lebanese cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 1 spring onion, finely chopped
- 1 cup sushi rice, rinsed
- 6 slice sushi ginger (to serve)
- 2tablespoons egg mayonnaise
- 2tablespoons sushi vinegar
- 1 1/2teaspoons sesame seeds (to serve)
- 185grams can tuna, drained

Method
Step 1 of 3
Place rice and 1 cup water in a small saucepan. Bring to the boil. Reduce heat to low, cover and cook for 12 minutes. Remove from heat, cover and set aside for 10 minutes.

Meanwhile, combine tuna, mayonnaise and onion in a bowl. Add vinegar to warm rice. Stir through well. Fill six holes of a patty pan with rice. Press down and smooth tops. Line a baking tray with plastic wrap. Using a 5.5cm round cutter as a mould, fill with a heaped tablespoon of rice. Press down firmly. Gently remove cutter. Repeat to make 6 bases. Cover tops and bases with plastic wrap. Chill for 30 minutes.

To assemble, spread bases with avocado. Add a few strips of ginger. Top with tuna mix, shaped into a patty. Finish with cucumber and red onion slices. Remove tops from patty pan and press onto burger. Sprinkle with sesame seeds and serve with wasabi.
