8 Ingredients

  • 3/4 cup sushi rice
  • 1 Woolworths crumbed chicken breast schnitzel
  • 5milliliter olive oil cooking spray
  • 1/2 bunch radish, thinly sliced
  • 1 Lebanese cucumber, deseeded, finely chopped
  • 1 sheet nori, cut into 6 strips, thinly sliced
  • 1/3 cup Japanese mayonnaise (to serve)
  • 1/3 cup salt-reduced soy sauce (to serve)

Description

Impress without the stress with this sushi recipe which uses an ice cube tray to give you perfect sushi cubes. They look stellar topped with strips of nori.

Method

Step 1 of 4

Cook rice according to packet instructions. Allow to cool completely.

Step 2 of 4

Preheat oven to 230°C/210°C fan-forced. Line a baking tray with baking paper. Place schnitzel on tray and bake for 20 minutes or until golden and cooked through. Cut schnitzel into 28 pieces.

Step 3 of 4

Lightly spray a 28-hole, 1-tbs capacity silicone ice cube tray with oil. Divide radish and cucumber among holes. Half-fill holes with rice, pressing firmly to compact. Top with a piece of chicken, then fill with remaining rice.

Step 4 of 4

Turn sushi out onto a platter and top with nori. Serve with mayonnaise and soy sauce.
