- 3 Hass avocados, halved, deseeded, cut lengthways into wedges
- 2 nori , cut into 1cm-wide strips
- 1/3 cup Sriracha-flavoured Japanese mayonnaise
- 1/4 cup drained Japanese sushi ginger

Description
Learn how to make nigiri with this easy three-step recipe that uses crispy chicken schnitzel, avocado and spicy sriracha mayo.
Method
Step 1 of 3
Rinse rice under cold water and drain. Place in a saucepan with 1 cups water. Cover. Bring to the boil over high heat. Reduce heat to medium-low and simmer for 15 minutes or until water has been absorbed and rice is tender. Remove pan from heat and stand, covered, for 5 minutes. Combine vinegar, sugar and salt in a bowl, then add to rice. Stir to combine.

Meanwhile, preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Place chicken on tray and bake for 15 minutes or until cooked through. Cool for 5 minutes. Cut chicken into 1cm-wide strips.
Step 3 of 3
Using damp hands (see Tip), place a heaped tablespoon of rice mixture in the centre of your palm. Squeeze gently to form an oblong. Cup and press ends in to ensure rice sticks together. Place 1 chicken slice on top of rice, followed by 1 avocado wedge. Wrap a nori strip around stack to secure (trim excess nori, if necessary). Repeat with remaining rice mixture, chicken, avocado and nori. Drizzle over mayonnaise and serve with pickled ginger.
