  • 2 cups sushi rice
  • 3 avocados
  • 1tablespoons lemon juice
  • 425grams tuna in oil, drained
  • 3 spring onions, thinly sliced
  • 2/3 cup mayonnaise
  • 1/4 cup sesame seeds, toasted
  • 1/3 cup tonkatsu deep-fry sauce

Description

A delightful fusion of Japanese flavours, this simple sushi slice features layers of fluffy rice, tuna, avocado, spring onion and mayonnaise.

Storage tip:
If avocados are a little firm, store them in a paper bag with a banana to speed up the ripening process.

Method

Step 1 of 4

Grease and line a 20cm (base) square cake pan with baking paper, allowing paper to overhang on two opposite sides for handles. Cook rice according to packet instructions. Drain. Spread rice over a large baking tray. Set aside, mixing occasionally, for 10 minutes or until cooled.

Step 2 of 4

Meanwhile, using a fork, coarsely mash 2 avocados with lemon. Add tuna, half of the onion and 1/3 cup mayonnaise and mix well.

Using hands, press half of the rice evenly over base of prepared pan and smooth surface. Sprinkle with half of the sesame seeds. Top with tuna mixture and smooth surface. Top with remaining rice, pressing with hands to smooth. Top with remaining sesame seeds. Cover and refrigerate for 4 hours or until firm.

Step 4 of 4

Drizzle sushi slice with sauce and 1 tbs mayonnaise. Slice remaining avocado. Arrange avocado over top of sauce. Sprinkle with remaining onion. Cut into slices. Serve with remaining mayonnaise.
