- 1/2 bunch coriander

Description
These fresh summer rolls get their spicy kick from kimchi in this fusion dish.
Method
Step 1 of 4
Place the rice noodles in a large boil and cover with boiling water. Leave to soak for 15 minutes and drain well.
Step 2 of 4
Fill a shallow dish with hot water and dip a rice paper wrapper in for 10-15 seconds until pliable. Drain on a clean tea towel and place on a chopping board.
Step 3 of 4
Arrange the vegetables, noodles, kimchi and coriander on one edge of the rice paper, fold up the ends and roll up tightly. Repeat with the remaining rice paper and fillings.
Step 4 of 4
Serve with satay sauce for dipping.
