  • 1tablespoons maple syrup
  • 4 nori sheets
  • 30grams spinach
  • 1 avocado, peeled, thinly sliced
  • 4 spring onions, thinly sliced
  • 2 carrots, peeled, thinly sliced
  • 1 red capsicum, cored and thinly sliced
  • 70grams teriyaki sauce (to serve)

Description

Quinoa adds nuttiness and goodness to these simple, veggie packed sushi rolls.

Method

Step 1 of 3

Place the quinoa in a saucepan of salted water and cook over medium heat for 15-18 minutes until tender. Drain well. Tip into a bowl. Mix in the rice wine vinegar and maple syrup.

Step 2 of 3

Lay the nori sheets on a chopping board and spread quinoa in a line along the a third of the sheet. Add spinach, avocado, spring onions, carrots and capsicum in neat layers and carefully roll up tightly.

Step 3 of 3

Chill for 30 minutes then slice with a wet knife into rolls. Serve with teriyaki sauce.
