  • 1 slice multigrain bread, torn
  • extra virgin olive oil cooking spray
  • 1 small brown onion, finely chopped
  • 1/2 green capsicum, finely chopped
  • 1 clove garlic, crushed
  • 2teaspoons Woolworths dried mixed herbs
  • 250grams Woolworths lean beef mince
  • 2tablespoons salt-reduced tomato paste
  • 1 free range egg white, lightly beaten
  • 8 sheets filo pastry
  • 20grams light tasty cheese, finely grated

Description

Everything that makes the Italian favourite memorable comes together in a light kid-friendly snack with extra texture from filo pastry and cheese baked to a satisfying crunch.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Process bread to make fine crumbs. Spray onion and capsicum with oil. Heat a small non-stick frying pan over medium-high heat. Add onion and capsicum and cook, stirring, for 2 minutes or until softened. Add garlic and herbs and cook for 30 seconds or until fragrant. Remove from heat. Cool.

Combine breadcrumbs, onion mixture, beef, paste and egg white in a large bowl. To make 4 rolls at a time, stack 4 filo sheets on a clean work surface, spraying oil between sheets. Fold in half. Spoon half of the beef mixture evenly along the longest edge. Roll up to form a log. Trim ends. Cut into 4 equal portions. Place on prepared tray. Spray tops with oil. Repeat to make 8 rolls in total.

Step 3 of 3

Sprinkle logs with cheese. Bake for 25 minutes or until cooked through and golden-brown. Cool slightly. Serve.
