  • 2 Woolworths wholegrain wraps
  • 1/4 shredded light tasty cheese
  • 5milliliter extra virgin olive oil cooking spray
  • 1 small brown onion, finely chopped
  • 1 small green capsicum, finely chopped
  • 100grams Woolworths lean beef mince
  • 1 clove garlic, crushed
  • 2 pinches Mexican chilli powder
  • 400grams can no-added-salt diced tomatoes
  • 125grams black beans, rinsed, drained
  • 1/2 cup salt-reduced chicken stock
  • 1/4 bunch coriander, leaves picked

Description

Filled with all the classic nachos flavours, this warm and hearty soup will please the whole family. It's perfect for a quick and easy meal on busy weeknights.

Freeze leftover mince for other recipes or use it to make a quick veggie bolognese and serve with wholemeal spaghetti.

Method

Step 1 of 3

Preheat oven to 200°C/180°C. Line a large baking tray with baking paper. Sprinkle wraps with half of the cheese. Bake for 10 minutes or until golden and crisp. Transfer to a chopping board and cut into wedges.

Meanwhile, spray a large saucepan with oil and heat over medium heat. Add onion and capsicum. Cook for 5 minutes, stirring, or until softened. Increase heat to high. Add mince, garlic and powder. Cook for 5 minutes, breaking up lumps with a wooden spoon, or until mince has browned.

Add canned tomatoes, beans, stock and 1 cup water, then bring to the boil. Reduce heat to medium and simmer covered, stirring occasionally, for 20 minutes or until slightly thickened. Ladle between bowls. Sprinkle with remaining cheese and coriander. Serve with chips.
