- 400grams chicken breast fillets, cut into 4 steaks
- 3 cups frozen peas
- 1 clove garlic
- 1/4 bunch mint, leaves chopped
- 1 lemon
- 3tablespoons Praise good oils traditional mayonnaise
- 4 Woolworths wholemeal rolls, split, toasted
- 1 head little gem lettuce, leaves separated
- 5mL extra virgin olive oil cooking spray
Description
A nutritious, flavour-packed delight, these hearty burgers combine succulent chicken with crunchy smashed peas and a zesty mayo sauce.
Method
Step 1 of 4
Spray a large frying pan with oil. Heat over medium heat. Add chicken and cook for 3 minutes each side or until cooked through and golden.
Step 2 of 4
Meanwhile, cook peas in a small saucepan of boiling water for 3 minutes. Drain and add to a medium bowl. Add garlic and coarsely mash. Stir in mint. Season with freshly cracked black pepper.
Step 3 of 4
Finely zest lemon. Cut lemon in half. Juice one half and save the other half for another use. Add zest, juice and mayonnaise to a small bowl and stir to combine. Season with freshly cracked black pepper.
Step 4 of 4
Cut chicken steaks in half, if desired. Spread half of the pea mixture over roll bases. Divide lettuce, chicken, mayonnaise and remaining pea mixture among rolls. Top with roll lids. Serve.
