- 250grams frozen broad beans, blanched, peeled
- 120grams baby spinach leaves
- 1 small red onion, thinly sliced

- 1/4 cup flaked almonds, toasted
- 1 long red chilli, thinly sliced

Description
A delightful fusion of creamy cottage cheese with vibrant veg and salad, this warming dish is a symphony of flavours that will have you coming back for seconds.
Method
Step 1 of 2
Brush zucchini with 2 tbs oil. Heat a chargrill pan over medium-high heat. Cook zucchini, in batches, for 2 minutes each side or until golden and tender. Whisk remaining oil, lemon juice and garlic in a small bowl.
Step 2 of 2
Combine zucchini, beans, spinach and onion in a large bowl. Add oil mixture and cup cottage cheese and toss to combine. Top with remaining cottage cheese, almonds and chilli. Serve sprinkled with lemon zest.
