Green goddess dressing
  • 1/2 bunch continental parsley, leaves picked
  • 1/2 bunch mint, leaves picked

  • 1 head broccoli, cut into quarters lengthways

  • 200grams Macro Organic frozen peas, blanched

Description

A delightful combination of flavours and textures, this salad is perfect for a quick lunch or dinner, featuring tender chicken, crunchy broccoli, and a creamy, tangy green goddess dressing.

Method

Step 1 of 4

To make dressing, place all the ingredients in a small food processor. Season with freshly cracked black pepper. Blitz until smooth. Set aside.

Step 2 of 4

Brush chicken and broccoli with oil and season well with freshly cracked black pepper. Heat a chargrill pan over high heat. Cook chicken for 5-6 minutes each side until cooked through and golden. Transfer to a plate. Cover loosely with foil to rest. Slice chicken.

Step 3 of 4

Add broccoli to chargrill pan. Cook for 3-4 minutes until charred and tender.

Step 4 of 4

Arrange salad, chicken and broccoli on serving plates. Drizzle with lemon juice. Top with peas and pine nuts. Drizzle with a little dressing. Serve salad with remaining dressing.
