  • 4 Woolworths wholemeal bread rolls
  • 5mL extra virgin olive oil cooking spray
  • 1tablespoons olive oil spread
  • 1tablespoons plain flour
  • 1 1/2 cups milk
  • 1/2 cup Woolworths shredded tasty cheese
  • 1 cup chopped, poached chicken breast fillet
  • 1 cup loosely packed baby spinach leaves
  • 2 carrots, peeled, cut into sticks, steamed
  • 450grams broccoli, cut into small florets, steamed

Description

A delightful, kid-friendly dinner that brings the flavours of creamy chicken and spinach together in an easy-to-eat, hand-held bread bowl. Try our chicken and spinach cob loafs today!

Use-it-up tip:
Use the reserved tops and filling of the bread rolls to make breadcrumbs. They’re great to crumb meats or scatter over pasta and salads.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Trim 2cm off the top of rolls. Remove bread filling, leaving a 1cm border. Reserve tops and filling for another use (see tip). Spray inside of rolls with oil. Place on a baking tray. Bake for 10 minutes or until crisp and golden.

Meanwhile, heat spread in a medium saucepan over medium heat. Add flour and mix until well combined. Using a whisk, whisk in half of the milk until well combined. Whisk in remaining milk. Bring to the boil. Reduce heat to low. Simmer, whisking often, for 4 minutes or until mixture thickens slightly.

Step 3 of 4

Reserve 2 tbs cheese. Add remaining cheese to sauce and stir until melted. Stir in chicken and spinach. Cook, stirring often, for 3 minutes or until chicken is heated through and spinach wilts. Season with freshly cracked black pepper.

Step 4 of 4

Divide chicken mixture among roll cases. Sprinkle with reserved cheese. Serve with steamed vegetables.
