Description

Kid-friendly and nutritionally approved, this cinnamon French toast with caramelised banana boasts a creamy ricotta topping, honey drizzle, and fresh raspberries for a delightful breakfast or brunch.

Method

Step 1 of 3

Reserve a pinch of cinnamon. Whisk eggs, milk and remaining cinnamon in a medium bowl until combined. Dip each bread slice into egg mixture until well-soaked on both sides.

Step 2 of 3

Spray a large non-stick frying pan with oil. Heat on medium-high heat. Cook each bread slice for 1–2 minutes on each side or until golden. Cut each slice diagonally into quarters before stacking on serving plates.

Step 3 of 3

Add banana to the same pan and cook for 1-2 minutes, each side, until caramelised. Top French toast with ricotta, banana, raspberries and reserved cinnamon. Drizzle with honey. Serve.
