- 1 1/3 cups quick oats
- 1 1/3 cups reduced-fat milk
- 3teaspoons maple syrup
- 2 eggs
- 5mL extra virgin olive oil cooking spray
- 2 cups Woolworths Greek-style natural yoghurt
- 250grams strawberries, hulled, quartered
- 125grams blueberries
Description
These easy-to-make, kid-friendly oat crêpes with creamy Greek-style natural yoghurt and fresh berries are nutritionally approved and sure to bring smiles to the table in the morning.
Method
Step 1 of 3
Blitz oats in a blender until a fine crumb forms. Add milk and 2 tsp syrup. Blend until smooth. Add eggs and blend until just combined.
Step 2 of 3
Spray a medium non-stick frying pan with oil. Heat over medium-high heat. Spoon cup batter into pan and swirl around to make a thin crêpe. Cook for 1 minute or until golden-brown underneath. Flip and cook for a further 30 seconds or until evenly browned. Repeat with remaining batter to make 8 crêpes in total.
Step 3 of 3
Combine yoghurt and remaining syrup in a medium bowl. Divide yoghurt among crêpes and top with a few berries, then roll up to enclose. Serve with remaining berries.
