  • 5mL extra virgin olive oil cooking spray
  • 400grams lean beef mince
  • 1tablespoons Woolworths pizza sauce
  • 1teaspoons cornflour
  • 1tablespoons low-sugar low-salt tomato ketchup
  • 4 Woolworths wholemeal bread rolls, split
  • 2 2 carrots, peeled, coarsely grated
  • 1 large tomato, thinly sliced
  • 1 medium Lebanese cucumber, peeled into ribbons

Description

With a juicy beef mince and fresh salad filling, these nutritionally approved sloppy Joes make a deliciously easy weeknight dinner for kids.
Instruction tip
Use-it-up tip:
Cook the remaining 100g mince with some grated carrot and garlic and use the mixture as a jaffle or quesadilla filling.

Method

Step 1 of 3

Spray the base of a saucepan with oil. Heat over medium-high heat. Add mince and cook, breaking up mince with a wooden spoon, for 4 minutes or until browned.

Step 2 of 3

Stir in pizza sauce until well combined. Stir in 1/2 cup water. Simmer for 2 minutes. Blend cornflour and 2 tsp water in a small dish. Stir cornflour water into mince mixture. Simmer for 1 minute or until sauce thickens. Stir in ketchup. Season with freshly cracked black pepper.

Step 3 of 3

Preheat oven grill on medium-high. Toast roll halves under grill. Divide carrot, tomato, cucumber and mince mixture among bread roll bases. Top with lids. Serve.
